There is some kind of symbiotic relationship ( Yeah, I have just taken up Std 9 Biology 😜) between one bowl meals and the rains. There is something beautifully comforting about sitting by the window, watching the rain and tucking into a warm bowl of deliciousness. I just love love doing that!
So, dinner today is Chicken Pot Rice – one of my favourite one bowl meals.
I make a very zippy and simple version.
I used carrots, broccoli, bell peppers, mushrooms, cabbage and spring onions.
CHICKEN POT RICE
So finely chop all the vegetables you have.
Also use chicken on the bone please. Why? Because the broth is what does the magic! Yes! Stay with me.
Recipe
- In a large pot, boil chicken on the bone pieces. Once the chicken is cooked, remove it and set aside to cool. Add salt and pepper to the broth and let it simmer.
- Now for the rice. I have used Ambemohur rice. I don’t like to use Basmati, because it doesn’t give that feeling of comfort. In my house I restrict Basmati to biryani only. For all other dishes I use the local short grain rice. So pick any short-grain rice of your choice. Stale old rice works best though.
- Now in a pan, add some Sesame Oil
- To that add some slivers of garlic and ginger (I add lots of garlic). I sauté the mushrooms first, and then add in all the vegetables.
- Once the chicken has cooled off debone the pieces and add the bones back into that simmering broth.
- To the vegetables add some dark soy and some chilli sauce and any other sauces you fancy
- Add in the shredded chicken
- Add the rice and give all of it a good mix.
- Now add some of that simmering broth to your pot rice, some, not too much and simmer for a couple of minutes.
- Add some spring onions greens for garnish.
Grab a nice deep bowl, serve of the pot rice.
