When a person is growing up, usually the first of many addictive taste they recognise are that of chocolate, and candy. Over time, either a person falls completely head over heals in love with chocolate, or completely disregards it. There is no in-between.

For us, at the Pandit household, chocolate is a religion. We usually have a stock overflow of all types of chocolates at home. We usually avoid candy (Oh all that sugar!) but are kinda generous and partial towards chocolate.
With summer in full bloom here in Mumbai, it is time for sorbets, and ices, and stuff. But you can’t come home to the warm embrace of a watermelon sorbet. Only chocolate can do that.
Making chocolate ice cream is a no brainer. But pairing it with a spice that complements takes some thinking to do. Chocolate as a flavour has many layered complexities, so it has to be paired with something that will complement its flavour, and yet retain its character. Cinnamon is one such spice. On it’s own, Cinnamon has many health benefits – it’s a powerful antioxidant, it’s good for your heart, it helps fight against many viral and bacterial infections and so on. And it smells so good! SO GOOD!
But when you pair it with chocolate, it takes the combination to another level altogether. This home made dark chocolate cinnamon ice cream is made on a custard base, and uses eggs. You could choose to replace the eggs with corn flour, but I always find that compromises the texture.
